One thing to keep in mind about Apple is that if you wish to work with Apple devices, you need to apply and be approved as an Apple developer. There is a 100$ fee and the application process may be slow.

Using pre-existing engines like Unreal is a good way to start. It provides you with functionality for physics, collision, lighting, etc; things that you would otherwise have to code yourself.
