So another thing I'm interested in for a career, is creating previews for both games and movies. What's this position called? What schooling do I need? Advice?

Do you mean making promotional trailers? If that's what you mean than your educational path should be video editing. Also it wouldn't hurt to learn a Machinima program either.
So...Film School, and maybe get your hands on a video editing program in the meantime.

This is normally done by the publisher or outsourced by a company. I normally call them Video Editors.

You should look into working with the Marketing department for publishing companies; i would expect they're the ones who mainly do this type of thing.
